Chicken Tortellini Soup

I was provided with a bottle of Thyme from Influenster & McCormick to try out & experiment with so today I made Chicken Tortellini Soup!

I've been wanting to make a tortellini soup for a while so I finally bought the ingredients to make one however, once I received the Thyme I decided to go a whole other way with my soup and sort of make it up on my own!

So the first picture there shows most of what I used. We have:

A package of chicken tenders
32 ounces of chicken broth
2 - 9 oz packages of spinach & cheese tortellini 
1 onion
1 package of celery
A bag of mini carrots
5 potatoes
McCormick's Thyme

I later decided to add in minced garlic, crushed red pepper flakes, and 8 cups of water along with some chicken bouillon cubes (cause more liquid was definitely needed).

I cooked the chicken with some garlic & thyme, chopping it up as it cooked so that it was in smaller chunks:

I then used half of the onion, celery & carrots & chopped them up into pieces a little bigger than grains of cooked rice and then did the same with the potato:

All of that went into the crock pot along with the chicken broth, some more garlic, thyme, and the red pepper flakes. Then as it cooked I decided that there just wasn't enough broth so I added 4 cups of water with 2 chicken bouillon cubes. After about 4 hours or so I added in the tortellini and then 4 more cups of water & 2 more chicken bouillon cubes and let it cook for another couple hours (all on low). 

Now I have lunch and/or dinner for the week and it's pretty healthy!!
