Get In Gear!


Another 5K done!  This one made me nervous cause I've been having some leg issues. I'm not sure if it was shin splints or what but the right leg, calf muscles just burned and ached. I've been wearing a compression sleeve and cutting back on the walking prior to the walk and I wore the sleeve and a tiger balm patch during it. Worked out pretty well. My leg and ankle made it through, I ran a little in the beginning and I didn't finish last. I didn't have the best time but I made it all through so that was good. 

It was a rainy day, from start to finish. I actually didn't mind walking in the rain since it wasn't a heavy rain. It was steady but light so I didn't get drenched or anything since I had a hat on and a waterproof windbreaker. I have to say that despite the weather this was a fun 5K. Lots of fun goodies and it was at Minnehaha Falls so there was a waterfall to snap photos of!


Pretty huh?? I'll have to get back to this park for some exploration type walking soon cause there looks to be some fun trails:



Ok, so my time for this was was 53 minutes, 3.2 miles and 378 calories burned. I forgot to write down the steps for this one since there was extra walking before and after and then I went to the gym and rode the bike for 40 minutes:-)

What? You never heard of it?? Well that's cause it's new:-) It's also made by a local dairy company and was making it's debut during this walk so lots of free samples of the chocolate and it's AWESOME! Perfect for after a walk, run, bike, or any type of work out. Heck, it's good just to drink it when you want some chocolate milk! I'm also using this run to fulfill a virtual run in honor of a fellow blogger that turned 50, Julie over at Healthy, Wealthy and Wise. I wanted to do one all on it's own for this but I'm trying to make sure the leg is healed before I overdo things. I figure the biking I did after this 5K, which ended up to be 12 miles, would be good enough to ease my conscious and make me feel like I wasn't cheating or something... LOL! If you don't already follow Julie then check her out, she is definitely an inspiration!

Wirscht Comes to Worse... WTF!

Remember the meals you used to have at home when you were growing up? Do you ever feel like you just can't make them like mom or dad used to make? Are there favorites you had that are unique or everyday comfort type foods that now a days when you eat them they just aren't quite the same? That's what I find now a days, now that I'm older and now that food or the ingredients seem to be more and more processed and less natural.... or something. I also get the line from my mom, when I ask her for the recipe for something I recall loving when I was growing up, "That's poor people food! I only made it cause we couldn't afford more." WTF??? I liked it, I don't care why we ate it!  LOL!  

Ok, I'm going off topic here. So today the letter is W and that's going to bring us Wirscht Salad. WTF is that you say?? Or do you know? I grew up with it as a kid cause my mom made it all the time. Now last week was V and I gave you all sorts of ideas for veggie salads with vinegar well Wirscht Salad my friends is similar to that, it's chopped up meat with vinegar, water and onions. Sounds gross or weird right? Yeah well check this out:



Looks like chopped up bologna right? LMAO!  Well that's cause that's what it is. Now first of all this is what I mean by things just not being the same as when we are young because back then when mom made this she used ring bologna. She's German and they made this there in Germany all the time with their fresh sausages and such that were similar to America's ring bologna. Well now she uses just regular sandwich bologna... WTF!?!?!  Talk about poor people's food! OK, so bologna isn't cheap really but come on.... there are better meat options mom! I have to say it's rather nasty because it's very greasy/fatty and the vinegar draws all that out and... BLECH! As a kid when it was ring bologna it was much better, there wasn't all that fat and trust me... it was a tasty summer meal. Yeah so this Wirscht Salad just isn't one of those meals from my childhood that I want to relive since it's not the same. I told mom the other day that this is no Wirscht Salad, it's Wirscht comes to Worst. She just laughs cause she thinks I'm crazy... I don't argue, she's probably right:-)

So no recipes for you to try this week my friends unless you'd like to give Wirscht Salad a try that is. I'd understand if you would like to pass on this one but should you be courageous I recommend finding a nice ring bologna, the more natural you can get the better... if there is such a thing, I really don't even know anymore.

Challenging Obesity!


Today was the walk that represents what I'm doing... Challenging Obesity:-)  Seriously, it's the walk... look at the little pic above there of the logo. It was another 5k and I thought all was good for this one but man am I having some issues with my right calf/ankle/foot, the outside of it. I'm not sure what I did or when but it's sore and hindering me from my walks!  

I did prevail and make it through and I even tried a little running here and there, which may have just aggravated things.  Just my luck seeing since I have another walk next Saturday! I'm hoping it works itself out during the week, I guess I'll have to take it easy on the walking until then and see how things go.  

Anyways, the numbers weren't great for this one. They clocked me at 56 minutes for this one. I forgot to write down the steps but it was 3.2 miles and about 256 calories.  Looking back on other 5Ks I've done so far I'm a little confused by the range in calories, it's weird really but that's what my HRM said so I just write it down.

V is for Variety

Hello all! Today we have the letter V for ya. I'm going to do a variety of things this time starting with a Vietnamese soup called Pho. I always hear people talk about it and when it comes to new foods I'm always leery cause I'm rather picky on what I will eat and how but I'm trying to broaden my horizons & Pho is one of those things I've been wanting to try. So a co-worker mentioned she visits a local restaurant called Thanh Truc ~ Green Bamboo for their Pho, one of the best. I ventured out to give it a try. Boy was it a ton of food! You start out with condiments and then they bring the soup for you to add those to:

What you get is a ton of bean sprouts, lime wedge, fresh Thai basil, and sliced peppers. The soup itself is a beef broth with tons of noodles, cilantro, thinly sliced round steak (which can be other types of meat such as seafood) and then other spices and such that they add for their own unique flavoring. There is also Hoisen and Sriracha sauces.  It was definitely good, a lot but good! You can click on the name of the soup and restaurant back up top there, in bold, to learn more details on both. The restaurant was very nice and inviting and the service was excellent so if you live in Minnesota or are ever visiting then I recommend that you check it out.  

Ok, my next thing is made with vinegar.  Lots and lots if you like that sort of thing, not so much if you don't:-) You choose. It's simply water, vinegar, onion, garlic, seasonings of your choice and then veggies.  I use cucumber, tomatoes, green beans, cabbage, or cauliflower. Sometimes I'll mix one or 2 but most of time time I make them separately. It's my favorite summer salad to always have it the fridge so that I can have some veggies quick with a meal or on their own. I do like to mix the cukes and maters together cause I will put that on a nice turkey burger to jazz it up a little:-)  So here is that combo:





Here's all you do, it's so easy... especially if you have a food processor that slices. I like to use English cucumbers if I can because the skin on those is thinner and then I don't have to peel them if I don't want to. If I have to use regular cucumbers then I do peel those. For maters I like to use Roma tomatoes because I think the skin is thinner on those, they hold up nicer when slicing them and they just taste better to me usually. I run them through the processor to get them nice and sliced then put them in a bowl and add water until they are covered. Then I add vinegar until, usually I just pour it in so I'm not sure how much but you'll probably want to start with 1/2-1 cup to start cause depending on how much water you have in there you may need more, less or just have enough. Now also beware that as it sits in the fridge it marinates so the vinegar will get a little stronger so you can start light and add more later if necessary. Now after that I take onion (as much as you want) and add that. Now when my mom makes it she adds onion slices or chunks but I don't like to bite into them so I run them through the processor to chop then into bitty pieces. I do the same thing with some garlic, again as much as you want. After all that I'll season with pepper and when I make just a cuke mix then I will sometimes add dill. I also use garlic &/or onion powder occasionally. You could add other stuff too like basil, rosemary, thyme so on and so on... I just choose not to go that route cause I just am not so fond of those I'm finding:-)  

Now I'll end with another victorious fruit selection that I made when I visited the local Aisan market for those great dragon fruit that I got last week. Here ya go:



Now it may not look so pretty but looks aren't everything people!  That there is an Asian pear, or as the sticker on it said... and Apple Pear. It's pretty much spot on with that name cause it's shaped like an apple and the skin, well it's not quite the same color but it's exactly like a pear's skin in how tender and fragile it is. Now you can eat them when they are still harder like an apple or a harder pear or you can wait until they begin to get a little more tender, which I prefer... it's how I like my pears also. It gets juicer when it's soft but there is a crisper feel to it like an apple and the taste of it is a mix between a sweet apple and a pear. The texture of the skin is equal to the pear and the flesh is not quite as grainy feeling as a pear but there's a hint of that, more of the apple feel though. It's white on the inside, I got carried away after the first bite and forgot to snap a picture to show that... it was just so juicy and delicious! Dear Diary ~ Week 4

Diary have I ever mentioned that I hate getting workouts in on the weekend? No? Well that's probably because up until now I really haven't been making myself go to a gym to work out! Well I have in the past but that was long ago. I joined a gym on 4/1 and my insurance will pay a portion of my monthly fee if I go 12 times a month. Well do the math and that's 3 times a week. Now I could go everyday one week and skip another all together or however, as long as there is 12 days total at the end of the month. I figure 3 days a week is good and spaced out enough so that I don't get sick of it too quickly. Anyways I try to go on the weekdays but that means back to back days if I need to skip a day or it doesn't always work out and low and behold, it happened on week 11 so I have to go on the weekend so I get my 3rd day in. The good part is I also bowl today so I have the time to kill before that. Ok, it's not really good news per say but I'm trying to be positive:-)

OK Diary, yesterday I said I hated working out on the weekends well even more I hate getting up early on them! Today is the Rise 'N' Shine 5K so it's up and at em at 6 am! Man, I feel like I have to go to work since it's the same time I get up for that. It's not really the same since I'll be outside and it's sunny, there's a lake involved, and getting lost in my thoughts. Well I get lost in my thoughts at work too and I sit by a window so I sort of get the sun.... no lake though and I'm in a cube where I should be doing work so nope... not the same, I'll gladly take the 5K for being off of work today:-)

Dear Diary today as I listen to my podcasts by Kevin Smith I'm reminded of how much I love him. Ok I loved him more before he became so into smoking pot but I still love him none the less:-) Now the boyfriend appreciates Mr. Smith but wasn't quite as fond of him as me. Not that he dislikes him in any way but he only knows him through his movies and a few talk show appearances. Well last year I took him with me to the screening of Red State and there was a Q&A after with Kevin so the boyfriend gained a new appreciation for him. This week I find him reading My Boring Ass Life, by Kevin Smith. It's basically a diary of sorts. Hey... like this Diary:-) Anyways I was pleased to know that he wanted to read the book and that I can now read it too! It's been on my list but I've been trying to finish what I have and keep forgetting. Anyways I'll have to start it soon cause he like it and we have very similar tastes so I will to!  That's my fun thing for today I think Diary... realizing that not only will I be reading the book but the boyfriend and me are more similar than we even realize:-)

Ok Diary, some thing's gone amok and I'm not sure what! You see I'm on this healthy lifestyle kick. OK not a kick really cause it's a lifestyle so it should be permanent right? Well that's my problem. They say it takes 3 weeks to form a habit but what they don't tell you is 1 day can change it's direction if you aren't careful! It slowly goes from moving up the good scale to inching right back down. Now I guess it makes a little sense cause your old habits you had longer so the new habit is not quite as strong to keep that older one down. Anyways, I was suppose to go to the gym and I didn't is what I'm trying to fess up to here. I didn't even walk at work during lunch cause of meetings. Blah to that I say. That means gym for sure Wed, Thurs and probably Sat, again. Keep me to it Diary and by that I mean my subconscious or something cause the diary is just a place where its thought are put out there for me and whoever else is curious to read:-) The fun moment for today is that I received my purple Coach purse and wallet and love them so.... have I mentioned how much I love purple? It's not real Coach either Diary so chill out, I spent a few 10's under $100 on the 2 together, HOOTIE-HOO!!

Happy thoughts today Diary! There is this game called Draw Something that I'm totally addicted too! So fun, its sort of like Pictionary but you play through a phone, or in my case an iPhone or iPad. You don't have to be the best at drawing and some people just write the actual word that you have to guess, which I hate, but those who want the challenge play by the rules of not giving the word an drawing what you can... sometimes using some word clues. It's totally a game that you should check out if you haven't already Diary... er um whoever is reading that is:-) It's my fun moment for today, and many days to come!

So I made it to the gym Wed and today Diary.  WOOT for me! My fun moment for today is realizing that when I go to the gym I have 30-45 minutes where I can read if I spend it on the bike machines that they have to offer.  I love it cause I don't make a lot of time to read and I do like to read. I have that Kevin Smith book to get to after all Diary:-) Since that is an actual book I can read that while on the elliptical cause it has this little doo hickey thing to hold the book for me. I have been reading using the Kindle app on my iPhone so that I have to hold and it's much easier to do that while sitting and peddling on the bike. I'm just excited cause I've made more progress on my current read in 2 days than I have in a week! LOL

It's Friday Diary, as if you didn't already know:-) Not only is it Friday though, it's Friday the 13th! Every other Friday is movie day for me and my bestie however she can't make it this week so I'm on my own. Now I could go to the gym so that I don't have to do it on a Sat but I'm already all geared up to do it Sat, and get some extra, extra reading in:-), so I don't want to go tonight. I think tonight should just be a fun night since I've been feeling this funk of sorts for a while now. Today's work day has been dragging on Diary so of course my mind then wanders and then my thoughts need to be shared:-) I keep hearing the Time Warp song in my head and I begin to wonder if we were to sing and dance it, and truly believe it, could we really create a time warp? I'm not saying I'd sing and dance but in my head I am at the moment and it's not working. Maybe the key is really doing it in public... yeah, not gonna happen... unless there are drinks first:-) Oh my fun moment... I had to stop at Target and my favorite thing to do there and at Wal-Mart is check out toys and find a favorite. My fav this trip was the angry bird toy cause I love the little noises and laughing sounds:-)

Ok, got the gym done and some extra reading in. HOOTIE-HOO! Now I've learned that having my health insurance pay for some of my gym membership fee is definitely a luxury that I haven't been appreciating as much as I should. So many are surprised by it and maybe even a little jealous of it so I really shouldn't take it for granted! It is a nice incentive to go and in the long run it helps keep you healthy so they see it as possibly saving them some medical costs. I'm lucky enough not to have to pay too much out of pocket for my health ins, it's figured in my salary, so that's even more of a luxury that on top of that and the fact that it's great coverage I get the extra benefit:-) Ok, with that being said Diary my fun moment for today is going to see the season opener of the Mn Vixen's. Well Diary, today I was up early for another 5K. This was a spur of the moment one that I signed up for and I wasn't really sure what I was in for obviously cause in the end I really only went 1/4 of a mile! This was the MIA Art Dash and I'm counting it as my fun moment of the day because really it was a fun run for families and it was geared towards kids. I didn't realize what it was an how it all worked cause they broke the 5K down into 3 different start times so that you could do the whole 5K, a mile and a half or a half of a mile so that each kid could choose or do them all. It was so cute and quite inspiring to see these kids run with all their hearts! They also had some Mn sport team mascots there to rile the little ones up and they are pretty cute also.  My favorite is the Mn Viking one. I did get a shirt, bib number and little kiddie medal for the little that I did do... cause it's a fun run, but I feel like I cheated since I didn't do a full 5K so this one I'll be doing my own 5K to make up for and then I'll do a separate blog to talk about it all. From Ugli to Unique

This week brings us to U my friends and I was having a hard time coming up with recipes for U that didn't just have U words in them like 'ultimate', 'unbelievable', 'utopian', 'unique', 'unlimited', etc.  There just aren't that many foods that start with U.  So with that being said all I have this time, recipe wise, is a juice made with the delicious Ugli fruit:-)

What is ugli fruit you ask?  Ok, maybe you know and aren't asking or maybe you just don't care but I'm going to share anyway.  It's a citrus fruit.  It's very juicy, very!  They can be found in Jamaica, which I so love to visit so I have been able to try them straight from the tree:-)  If you click on the name back there you'll be taken to the wiki page that gives a little info but it's short and sweet.  Basically they look like a irregular, unripe, ugly grapefruit or large orange and they are juicier than either with a flavor more on the sweet and sometimes tangy rather than that of a grapefruit, which is more bitter.  The skin around the pulp is a little tougher to chew than that of an orange so I normally just try to get at all the juice and pulp & leave that membranous (I know that's not a word but I'm using it) covering behind:-)

Now since they are so juice I figured hey.... let's add it to some juice.  I just mixed it with some cucumber, beets, carrots, and yep it was yummy in that also.  





Beets always give juices that great color:-)  It's a combo I make often with lemon rather than the ugli fruit but with ugli fruit it's just as good.  Ok, maybe not just... I miss that lemon flavor that is more acidic and cuts the beet flavor a little more than the ugli fruit does on its own I guess... LOL!  

Ok, I decided to also share my unique find.  I often watch the cooking channel and once in a while they use dragon fruit in things.  It always looks so yummy that I want to try it but living in the Midwest we don't really find it in our local grocery stores.  Well low and behold, the Asian markets do stock it when it's in season and I was able to find some!!  I love it!  It's a unique looking fruit, grows on cactus like plant, and sort of has a kiwi/pear flavor.

Rise 'n' Shine!


Today is Easter as we all know but it was also 5K day.  The Rise 'n' Shine 5K that is and it was at Como Lake this morning.  We had a rainy day yesterday but today the sun was out at 6:30 am or so and has been shining bright ever since so it was a beautiful day for a walk.  It was a little brisk out there this morning but that's way better than too hot so I'm not complaining by any means:-)  

I was hoping to have a finish time of under 55 minutes but no go.  I went to the gym yesterday and did some biking on this hill program and yeah... my legs were feeling that pain today when I walked.  I did run a couple times during the last mile or so in hopes to try to get that time down some but nope... wasn't happening cause my running isn't quite fast enough to make much of a difference yet.  Oh well, I'll keep at it:-)

So I finished in 57 minutes, burned 392 calories, walked 8104 steps and that was 3/22 miles.  Here is my swag:


We just got the shirt there but it's a lovely shade of purple, which you can't really tell so much from the picture.  I love purple, it's my favorite so I was quite excited and actually put it on and did the walk in it.  Came in handy cause the shirt I had on wasn't quite warm enough:-)  

Ok, I did manage to take a picture or 2 also that I wanted to share because this my friends is also my fun thing for day 8 of fun:-)






There is a picture of the sign at the lake and then some shots of the lake this morning. I love the 2nd one with the sun being reflected there in the water. They are a little dark because it was so bright and I was using my camera on my phone but I love the nature pics:-)

I'm also using this walk to fulfill:  


I wanted to do a separate walk for it but it was to be completed 4/6-4/9 & I just won't be able to fit another in.  I feel ok with that since I did walk 5K or more on 4/2, 4/3 and I biked 8 miles at the gym on 4/5 & 4/7.... the biking at the gym could count I suppose but I have no picture proof of that:-)

Oh, I forgot about the fun stuff for 4/7!  Can't forget that so we'll tack it on here:-)  It was Saturday so that is bowling day.  I did pretty well with an overall score of over 300.  I know, that doesn't sound great for 3 games.... LOL... but it's good for me:-)  That wasn't all the fun though, one of the fellow bowlers brought a fun little gift of these little cuties:


Aren't they cute???  They are plastic Easter eggs so they had some jelly beans & chocolate in them.  I guess in more ways than one I was hanging with my peeps on Saturday;-)

Dear Diary ~ Week 3

Man Dear Diary, it's a good thing that I am the only one that cares to read this cause my writing leaves something to be desired. I much rather type now a days cause it can be done faster, faster and it's neater, therefore much easier to read. I also type fast enough to keep up with my rambling thoughts so I can make sure to capture it all. The problem is I just don't always have access to get it out in my virtual diary timely enough ya know? So I gots ta write it when I feel it:-) Anyways my topic today is do you ever wonder why it is that when you realize just how much money you owe it just makes you want to spend more?OK maybe it's just me that has that problem:-) Yes it is a problem and the first step is admitting you have one right? How come it's easy to admit it but harder to fix it when everyone says it's the other way around? Just cause I know it's a problem really doesn't make it any easier to fix. LOL, like it's really that big of one, I work so I can pay and that's great. I just gotta say no to more spending and yes to paying off the money already spent. That and a couple hundred other things and life is good. Alright it's good now, way to make me work it our Diary. Hear that?  Life is good!

Lolly gag, today I wonder why that term is used for someone that is fooling around? OK, now that I wrote it out as such it just sounds dirty. Yes I have the humor of a 16 year old boy Diary, it can't be helped! OK now initially I wondered cause I thought of lolly as a lollipop or sucker and gagging as choking on one. Now I do like suckers and if I were to choke on one I guess it would be cause I was fooling around so I guess not that I write that out and think about it it all does make sense after all. Dang it! Let's go back to the dirty version cause that makes for more interesting conversation:-) OK Diary, I'll save it for another day:-(

Diary, I thought today I'd fill you in on my 30 Days of Fun Challenge I'm participating in. Life is stressful so you just gotta find the fun in it ya know? Anyways I thought since I journal a little something daily it might be fun to include my fun stuff that I do here cause I do put these entries in my blog for safe keeping so it sort of kills 2 birds with 1 stone as they say (but I'm still not sure why we want to kill birds!). So today my fun was actually in relation to yesterday's fun! You see, the boyfriend gave me some stress toys and I brought them to work. I posed for a fun pic with them yesterday but today brought them to work so they could be shared with others and the boss, she took me up on the offer. Laughs were had! You just gotta love laughs! Now what I found hilariously funny is that the box says not to let the boss see you playing with it and by boss they don't mean Springsteen. It seriously says that. It had me at slinky but humor is always a plus! Well Diary that laughter fueled me through my day and gave me the energy to walk home from work, gotta luv it! My mind of course has to work much faster than the rest of me so it was fast at finding me something to focus on for the walk. I came up with the fact that there are some things worth waiting for and others that aren't but you don't always know which is which until it's too late. So as I walked home tackling hill after hill and finally realizing just exactly why it is called "Down" town St. Paul I figured out the moral to my earlier thought! The moral is you should embrace patience and perseverance! Unless you find them shaking their goods at a strip joint, then you must visualize and covet until you figure out how to achieve your overall goals. I posted that on Facebook even but I don't think people get my humor Diary... LOL! They did however like my fun pic from yesterday of me in a clown nose so that was a good thing, positive feedback soothes the soul:-)

So Dear Diary as you may recall I walked over 2 miles each day since Monday, yeah that's 3 days! What I've discovered is that St. Paul is one hilly city! I can walk around a lake or whatever and find some less hilly spots but the general neighborhoods and areas have some steep hills and they suck butt!! The only thing that gets me through them is the hope that while they are sucking they suck some of the fat right out of my butt! Yeah, see... positivity:-) I'll always have that going for e if I allow it. Ok so my fun thing for today is my Go Sport ID bracelet that came and I love it! So light that I don't even know I'm wearing it. I know you want one Diary:-) I put my favorite quote on the front and then the ER stuff on back and it's purple of course cause I love me some purple! Now if I collapse while I'm walking I can be identified:-)

Dear Diary, you know how when you are in school there is the click of kids that are the "cool kids" and everyone wants to be liked by them? You know, you want to hang out or just be near them in hopes that you will eventually just be accepted into the group? Yeah, I have that relationship with hats! Don't judge me Diary! I love them and I so want them to be my friend but we seem to hae this love/dislike relationship. I know they don't hate me but they dislike me and we don't really work well together yet I keep trying:-) You see in high school Diary I was meek and just observed from outside, never really tried to become a part of the crowd for fear of rejection or whatever but no more! I'm an adult now and I'm just going to keep putting myself in their little collections until I find the right fit and even if I don't... well let's just say money talks so I'm sure I can get them to like me enought to come home and be my friend there, whether we are seen in public together or not will just depend on how well we do alone. Man, that almost sounds like the makings of some weirdo, fetish type porno or something! Well folks the fun for today is desk toys and girl's night out! Yeah, PARTY!! Is it wrong to start the party early with my desk toys while at work? I think not:-)

Tasty Thursday??

Today is Thursday and we are on letter T.  Did I plan it this way so I could milk the T as much as possible? Not knowingly but it's sorta cool it ended up that way:-)  Don't worry though, there is actually some terrifically, tasty food involved so it really is a tasty Thursday. What makes it even better is that I didn't have to cook it this time! OK, in the past I have sometimes had some help but I found the recipes and everything. This time my boyfriend came up with the menu for me and cooked it!  Yeah, he ROCKS!  

For a while I've been saying I wanted to try Talapia.  Now I don't like fish mind you, I don't like any seafood or fish.  I've been told that Talapia is a mild fish, meaning it's not so fishy tasting and it's a nice white meat... which appeals to me cause white meat chicken is my favorite meat:-)  So the boyfriend, who's name just happens to begin with a T as a matter of fact, said he would make Twice Triple Spiced Tilapia, Two Tone Tarragon Rice, Sauteed Brussel Sprouts and Triangle Faux Foccacia.  Yeah, he used to cook for a living:-)

Here's the goodness:



Don't let the picture fool ya, I don't take such great ones and this one was taken with my iPhone:-)  That rice, delicious!!  The brussel sprouts, they were fresh rather than frozen so they of course were great!  The bread, a yummy winner.  The fish..... not to take away from the cook cause it was good but I'm not a fish person so I could take it or leave it. There was a fishy taste and that, along with the fact that I know it's fish and my mind says "You don't like fish, it's fishy!" wasn't really helping the cause:-)  Once I added some lemon juice and began eating it along with the rice, sprouts and bread rather than on it's own it was less detectable (that fishy taste that is).

So, I tried new stuff and it was fish and it wasn't so bad really:-)  After that I had a bowl of tripled fruit... Ok, I just called it that for the love of T:


It's just a bowl of cut up cantaloupe, strawberries and a few grapes.  YUM!  

The boyfriend came up with the recipes for the meal so if you'd like to give them a go he said I could share:-)

Twice Triple Spiced Tilapia

3 Tilapia fillets
1tsp Granulated Garlic
1tsp Salt
1 tsp Pepper
Lemon juice from 1 lemon

Squeeze juice of lemon on the fillets, coat both sides with the spice mix and grill on high heat until done.

Two Tone Tarragon Rice

Equal parts white and wild rice, 1/2 cup each

1 Tbsp butter
1 cup water 
Salt & Pepper to taste
1 tsp of dried Tarragon
1 tsp of honey

Prepare rice together as directed. Add spices, mix thoroughly before covering rice. Let stand, uncovered. Mix in butter and honey and serve.

Triangle Faux Foccacia 

Roll of Pillsbury Crescent Rolls
Olive Oil
Various Spices (to taste)

Roll out the dough, brush on olive oil (to cover the surface), spread garlic and Italian seasoning, granulated garlic and grated Parmesan.  All spices added to your tastes.  Bake as directed on roll, until brown.  

There you go, give it a try... especially if you like fish;-)

Jelly Beans Are Fun


I'm putting this in writing on April 4th but I completed the walk on April 3rd. Now I was checking out a new area to walk and there were lots of steep hills so the 5K took me longer than normal because of that and the fact that I stopped here and there for pictures:-)

So here are the numbers:

Finished in 1 hour and 24 minutes
Burned 343 calories
Walked 8619 steps
3.56 miles

I'm always shooting for under an hour but those hills kicked my butt and the pictures... had to take some pictures:-)  I walked from home to Mounds Park which is less than 2 miles away and has a great scenic view of down town St. Paul.  It's called Mounds Park because there are mounds that represent the Indian burial grounds that are there.  Here's the pics:


That there is the sign to the park that tells a little about it and one of the burial mounds. Hard to read but I love that sun burst!  



Here we have a view of the Mississippi River from the bluffs of Mounds Park, with the sun at my back.  The 2nd picture is a view of Down Town St. Paul, across the Mississippi River, again from the bluffs of Mounds Park but now looking into the sun... which is why it looks darker.


This picture I just love cause you see Minnesota's cloud making factory there in the distance.  LOL... I'm joking!  I love it cause you see the blossoms blooming and I just like the character the bush adds to the view:-)

So there you have it, my Jelly Bean run... I didn't have any jelly beans but I did have a lot of fun:-)
